 2 ¼ cups rolled oats
 1 ½ tsp cinnamon
 1 ½ tsp baking powder
 ¼ tsp salt
 1 ½ cups shredded carrots (approx 2-3)
 2 ½ cups almond milk
  cup honey
 2 tsp vanilla extract
 ½ tsp ground ginger
 ½ cup raisins
 ½ cup chopped walnuts

Preheat oven to 375F

Mix together oats, cinnamon, baking powder and salt

In a separate bowl, mix together carrot, almond milk, honey, vanilla and ginger

Add wet to dry and stir until combined

Stir in walnuts and raisins

Pour into baking pan and pack down solid portion with spoon

Bake until golden brown around edges (~30mins)

Cool ~10 mins before cutting
