Chocolate Chip Coconut Cookies (9 servings)

Buttery, freshly baked chocolate chip cookies with gooey chocolate melting in each bite, served on a white ceramic plate. Perfect for a sweet treat or dessert.

 1 ¼ cups all purpose gluten-free flour
 1 tsp baking powder
 3 tbsp coconut sugar
 ¼ cup coconut oil (melted)
 ¼ cup plain coconut milk
 1 tsp vanilla extract
  tsp sea salt
  cup dark chocolate chips

1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl combine the flour, baking powder, and coconut sugar. Add coconut oil, coconut milk, vanilla, and salt and mix until a dough forms. Add an extra splash of coconut milk if needed. Fold in the chocolate chips.
3. Scoop about two tablespoons of dough per cookie and form into a ball. Place on the baking sheet and slightly flatten, leaving space between cookies.
4. Bake for eight to nine minutes. Let the cookies cool for five minutes before transferring them to a cooling rack for another five minutes. Enjoy!
