 1 large onion, diced
 1 celery stalk, diced
 2 large bell peppers, chopped
 3 cloves garlic, minced
 2 tsp cumin
 1 tbsp chili powder
 2 tsp cinnamon
 1 tsp red pepper flakes
 1 cup uncooked quinoa
 8 tomatoes, diced
 2 cups kidney beans
 pinch of salt and pepper

Add all ingredients into slow cooker and stir to combine

Cook on high 4-6 hours
