Vanilla Maple Granola with Cashew Milk (8 servings)

Crunchy granola with nuts and dried fruit in a bowl with milk, healthy breakfast option.
 2 cups quick oats
 1 cup walnuts (chopped)
 ½ cup cashews (raw)
 ¼ tsp sea salt
 1 tsp vanilla extract
 ¼ cup maple syrup
 ¼ cup extra virgin olive oil
 12 cups unsweetened cashew milk

1. Preheat the oven to 350oF (175oC). Line a baking sheet with parchment paper.
2. Add oats, walnuts, cashews, and sea salt to a large bowl and mix well.
3. In a separate bowl, whisk together the vanilla extract, maple syrup, and oil. Pour this mixture over the oat mixture and stir well to coat.
4. Put the oat mixture onto the baking sheet and spread it out evenly. Bake for 20 minutes, stirring halfway through.
5. Let the granola cool on the baking sheet for 10 minutes before serving. Serve with the milk and enjoy!

Leftovers
Store the granola in an airtight container in a cool and dry area for two weeks. Keep away from heat. Freeze for up to three months.

Serving Size
One serving is about two cups.

More Flavour
Add a drizzle of honey or maple syrup.

Fresh berries.
