 2 cups quinoa
 ¼ cup red wine vinegar
 2 tsp salt
 1 tsp pepper
 1 tsp lemon juice
 4 tsp Dijon mustard
 ½ cup olive oil
 2 cucumbers, chopped
 1 green pepper, chopped
 ½ onion, chopped
 2 tomatoes, chopped
 10 black olives, chopped

Cook quinoa in saucepan according to directions

Place cooked quinoa in large bowl and refrigerate until cold

Mix vinegar, salt, pepper, lemon juice and mustard until combined and thick

Add cucumber, pepper, onion, tomato and olives to quinoa

Add dressing and fold until mixed
