
2 sweet potato (small, peeled, chopped)
2 tsp extra virgin olive oil (divided)
sea salt & black pepper (to taste)
½ cup quinoa (dry, rinsed)
1 can tuna (drained, flaked)
½ avocado (chopped)
2 stalks green onion (chopped)
½ lemon (juiced)

- Preheat the oven to 400ºF (205ºC). Line a baking sheet with parchment paper.
- Add the sweet potato to the baking sheet. Toss with half of the oil, salt, and pepper.
- Bake for 30 to 35 minutes until cooked through and browned.
- Cook the quinoa according to the package directions. Once cooked, drain if needed, season with salt and pepper, and stir in the remaining oil.
- Divide the quinoa, sweet potato, tuna, avocado, and green onion evenly between plates.
- Drizzle with lemon juice. Enjoy!
