Tuna, Sweet Potato & Quinoa Bowl (2 servings)

Tuna, Sweet Potato & Quinoa Bowl
 2 sweet potato (small, peeled, chopped)
 2 tsp extra virgin olive oil (divided)
 sea salt & black pepper (to taste)
 ½ cup quinoa (dry, rinsed)
 1 can tuna (drained, flaked)
 ½ avocado (chopped)
 2 stalks green onion (chopped)
 ½ lemon (juiced)

  1. Preheat the oven to 400ºF (205ºC). Line a baking sheet with parchment paper.
  2. Add the sweet potato to the baking sheet. Toss with half of the oil, salt, and pepper.
  3. Bake for 30 to 35 minutes until cooked through and browned.
  4. Cook the quinoa according to the package directions. Once cooked, drain if needed, season with salt and pepper, and stir in the remaining oil.
  5. Divide the quinoa, sweet potato, tuna, avocado, and green onion evenly between plates.
  6. Drizzle with lemon juice. Enjoy!
