Wild Rice Salad (2 servings)

wild rice salad
 ½ cup wild rice (dry)
 1 cup mixed greens
  cup red onion (sliced)
 2 tbsp extra virgin olive oil
 2 tsp white wine vinegar
 ¼ cup feta cheese (crumbled)
 sea salt & black pepper (to taste)

1. Cook the rice according to the package directions.
2. Let the rice cool for 10 minutes before adding it to a large bowl. Add the remaining ingredients and toss to combine. Divide into bowls and enjoy!

Refrigerate in an airtight container for up to three days.

One serving is approximately 1 1/4 cups

Additional Toppings
Top with fresh herbs like parsley, dill, or basil.

Omit the feta cheese or use a dairy-free alternative.
