
½ cup wild rice (dry)
1 cup mixed greens
⅓ cup red onion (sliced)
2 tbsp extra virgin olive oil
2 tsp white wine vinegar
¼ cup feta cheese (crumbled)
sea salt & black pepper (to taste)

1. Cook the rice according to the package directions.
2. Let the rice cool for 10 minutes before adding it to a large bowl. Add the remaining ingredients and toss to combine. Divide into bowls and enjoy!
