
4 slices bacon (chopped)
1 russet potato (large, cubed)
6 eggs
2 tbsp parsley (chopped)
2 tbsp fresh dill (chopped)
1 tsp garlic powder
sea salt & black pepper (to taste)

- Preheat the oven to 400ºF (205ºC).
- Heat a large pan over medium-high heat. Add the bacon and cook for four to five minutes, stirring occasionally, until crispy. Transfer the bacon to a plate. Drain the excess fat, leaving a small amount in the pan.
- Add the potatoes to the pan. Stir and cook over medium heat for 10 minutes, stirring occasionally, until slightly browned.
- In a large bowl, whisk the eggs. Add the bacon, potatoes, parsley, dill, and garlic powder.
- Stir to combine. Season with salt and pepper.
- Grease a deep baking dish with oil. Pour in the mixture and cook in the oven for 15 to 17 minutes until the eggs are set and cooked through.
- Cut the casserole and divide evenly between plates. Enjoy!
