Bacon, Potato & Herbs Breakfast Casserole (6 servings)

 4 slices bacon (chopped)
 1 russet potato (large, cubed)
 6 eggs
 2 tbsp parsley (chopped)
 2 tbsp fresh dill (chopped)
 1 tsp garlic powder
 sea salt & black pepper (to taste)
 avocado oil spray

  1. Preheat the oven to 400ºF (205ºC).
  2. Heat a large pan over medium-high heat. Add the bacon and cook for four to five minutes, stirring occasionally, until crispy. Transfer the bacon to a plate. Drain the excess fat, leaving a small amount in the pan.
  3. Add the potatoes to the pan. Stir and cook over medium heat for 10 minutes, stirring occasionally, until slightly browned.
  4. In a large bowl, whisk the eggs. Add the bacon, potatoes, parsley, dill, and garlic powder.
  5. Stir to combine. Season with salt and pepper.
  6. Grease a deep baking dish with oil. Pour in the mixture and cook in the oven for 15 to 17 minutes until the eggs are set and cooked through.
  7. Cut the casserole and divide evenly between plates. Enjoy!
