Cinnamon Pear Oatmeal with Walnuts (2 servings)

Creamy oatmeal topped with roasted apples and chopped nuts in a small white bowl, served with a white spoon, ideal for a nourishing breakfast or healthy snack.
 2 pear (large, peeled, sliced)
 1 ½ tsp coconut oil
 2 tbsp maple syrup (divided)
 1 tsp cinnamon
 2 cups water
 1 cup rolled oats
 2 tbsp walnuts

  1. In a saucepan over medium heat, add the pear, coconut oil, half of the maple syrup, and cinnamon. Stir and bring to simmer.

  2. Immediately cover the saucepan with a lid and simmer on low heat for about 15 minutes or until the pears are soft. Check occasionally and add a splash of water if necessary.

  3. Meanwhile, bring the water to a boil in a small saucepan. Add the oats and the remaining maple syrup.

  4. Reduce to a steady simmer and cook, stirring occasionally for about five minutes or until the oats are tender and most of the water is absorbed.

  5. Serve the oatmeal with cinnamon pears and walnuts. Enjoy!

Leftovers

Refrigerate in an airtight container for up to three days. Warm up before serving.

Serving Size

One serving is equal to approximately 1 1/2 cups.

More Flavour

Add ginger to the pear mixture.
