
1 ½ cups quinoa, rinsed
3 cups vegetable broth
1 zucchini, chopped
½ cup mushrooms, chopped
½ cup broccoli, chopped
½ cup red onion, chopped
⅓ cup olive oil
1 tbsp balsamic vinegar
1 tbsp lemon juice
2 cloves garlic, minced
1 tbsp dried dill
1 tbsp dried parsley
salt and pepper to taste

Cook quinoa as directed and rinse thoroughly

Bring broth to a boil, add quinoa and simmer uncovered for 15 minutes or until broth is well absorbed

Transfer quinoa to large bowl, mix in small amount of olive oil to prevent sticking and allow to cool

In a small bowl, mix together remaining oil, vinegar, lemon oil, parsley and garlic in small bowl

Add zucchini, mushrooms, broccoli and onion to quinoa and toss well with dressing mixture, dill, salt and pepper

Chill before serving
