
1 tbsp avocado oil
2 zucchini (medium, thinly sliced lengthwise, halved)
1 tsp curry powder (divided)
sea salt & black pepper (to taste)

1. Warm the oil in a large pan over medium heat.
2. Add the zucchini and season with half of the curry powder, salt, and pepper. Cook for five minutes, then flip, and season with the remaining curry powder. Cook for another five minutes, or until cooked through. Enjoy!
