Pumpkin Chocolate Oat Balls

Pumpkin Chocolate Oat Balls
 1 cup Oats (rolled)
 ½ cup Pitted Dates (chopped)
 ½ cup Pureed Pumpkin
 ½ cup Cashew Butter
 1 tsp Vanilla Extract
 ¼ tsp Sea Salt
 ½ cup Dark Chocolate Chips

Directions

  1. Add the oats to a food processor. Blend until it reaches a flour-like consistency.

  2. Add the dates, pureed pumpkin, cashew butter, vanilla, and salt. Blend until combined and the mixture holds together.

  3. Use a cookie scoop or tablespoon to scoop the mixture. Roll it into balls with your hands and repeat until all the mixture is used. Transfer to the freezer for one hour.

  4. Melt the chocolate in a saucepan over low heat or in the microwave in 30-second intervals. Dip each ball into the chocolate and return to the freezer for 10 to 15 minutes until the chocolate has hardened. Enjoy!

Leftovers

Refrigerate in an airtight container for up to five days. Freeze for up to two months. If freezing, thaw for five to 10 minutes before serving.

Serving Size

One serving is two balls.

No Cashew Butter

Use tahini, almond butter, or peanut butter instead.
