2 cups steel cut oats
½ cup vanilla protein powder
¼ cup unsweetened shredded coconut
3 tbsp ground flaxseed
2 tbsp chia seeds
1 tsp stevia powder
½ cup blueberries (fresh or frozen)

1. Preheat the oven to 350F (175C) and line a baking dish with parchment paper.
2. In a mixing bowl, gently combine all the ingredients, folding in the blueberries last.
3. Transfer to the baking dish and bake until a toothpick comes out clean, about 40 to 45 minutes. Let cool before serving. Enjoy!
