
Preheat oven to 425F
Lightly season chicken breasts with salt and pepper
Line baking pan with aluminum foil. Place empty pan in oven while glaze is prepared.
Melt coconut oil in frying pan. Add garlic and cook long enough to soften but not brown.
Add honey, mustard and pinch of salt and pepper. Stir well enough to blend and simmer over medium heat 2-3 minutes.
Remove hot pan from oven. Place chicken breasts equal distance apart (~1/2 inch between) and pour hot glaze evenly over chicken breasts.
Return pan to oven and bake for 15 minutes. Remove from oven to baste with glaze in bottom of pan. Return to oven for 15-20 minutes or until meat thermometer reads 170F at thickest part of breast.
