
1 ½ cups lentils, rinsed
3 cups water
2 tbsp olive oil
3 cloves garlic, minced
2 stalks celery, chopped
½ tsp salt
1 cup unsweetened coconut, shredded
¼ tsp cinnamon
½ tsp ginger
½ tsp tumeric
2 large red apples, diced

Add lentils to water and bring to a boil, simmer 30 minutes or until tender

Add oil to skillet and sauté garlic, onion, celery in salt, coconut, cinnamon, nutmeg, ginger and turmeric until softened adding water as necessary

Add apples to skillet to combine and cook covered 10 additional minutes

Combine with lentils in casserole dish
