
1 lb ground turkey
2 tbsp coconut oil
3 clove garlic, minced
1 medium onion, chopped
4 stalks celery, chopped
1 carrot, chopped
1 red bell pepper, chopped
½ tsp salt
½ tsp black pepper
1 tsp cumin
1 ½ tbsp chili powder
1 tbsp Cajun spice
2 tbsp paprika
3 cups diced tomatoes
2 cups chicken broth
1 cup brown rice

Brown turkey in coconut oil in large saucepan or wok

Add garlic and onion and stirfry until onions begin to soften

Add all other ingredients except for the rice and bring to a boil

Add the rice and turn heat down to slow simmer. Cover and cook for 15-20 minutes until rice is tender.
