
3 cups dry split peas, rinsed
8 cups water
1 tsp salt
1 bay leaf
1 tsp dry mustard
2 onions, chopped
4 cloves garlic, minced
3 stalks celery, chopped
2 carrots, chopped
3 tbsp apple cider vinegar
salt and pepper to taste

Combine peas, water, salt, bay leaf and mustard in large pot

Bring to boil

Reduce heat and simmer partially covered for 20 minutes

Add onions, garlic, celery and carrots and simmer for 40 minutes, stirring occasionally

Add salt, pepper and apple cider vinegar
