
¾ cup long-grain brown rice
1 cup water
2 tbsp olive oil
1 onion, chopped
4 small zucchinis, chopped
½ cup mushrooms, chopped
1 clove garlic, minced
1 ¼ tsp garlic powder
½ tsp basil
¼ tsp cumin
½ tsp oregano

Cook rice according to directions

Heat oil in skillet over medium heat

Cook zucchini, mushrooms, onion and garlic until tender

Season with garlic powder, basil, cumin and oregano

Mix with rice until heated through
