Chocolate Tahini Puffed Quinoa Bars (8 servings)

Delicious homemade chocolate rice crispy treat squares stacked, close-up view. Perfect for a healthy snack or dessert, featuring crispy rice cereal and rich chocolate.
 ½ cup pitted dates (softened in hot water, drained)
 ½ cup tahini (well stirred)
 ½ cup oat milk
 1 tbsp cocoa powder
 ¼ cup chocolate protein powder
 ¼ tsp sea salt
 3 cups puffed quinoa

1. Line a pan with parchment paper.
2. Add the softened dates to a food processor with the tahini. Mix on high until well blended. Add the milk, cocoa powder, protein powder, and salt and blend again until smooth.
3. Pour the puffed quinoa into a large bowl. Add the tahini mixture into the bowl and use a spatula to mix until well combined.
4. Transfer into the prepared pan and use damp hands to press the mixture into the pan. Place in the freezer to set for about 30 minutes. Remove the bars from the pan and slice. Enjoy!
